I found another pair of unclear statements in the jedi rules. Both pertain to character creation:
On page Lightsabers, Character Creation' admin wrote:New Jedi Characters get a blade or pair of blades of their choice with no special features to start with. You can change to a different saber configuration later, so take your limited selection of styles into account when starting out!

and
On page Combat Styles, Character Creation' admin wrote:Characters may have a single Combat Style, specifically Shii-Cho to start with. They know no Special Manoeuvres to start with.

When combined, these two statements make a large part of the first statement superfluous: "You can change to a different saber configuration later, so take your limited selection of styles into account when starting out!" does not really matter, because there is no choice of combat style available.

These two statements can be interpreted in two ways:
  1. The Henry Ford way: "Any jedi can have any combat style that she wants so long as it is Shii-Cho"
  2. The design your own style way: "Any jedi can have any combat style that she wants so long as it exists"

Which one is it?

You only get one style, though I am considering adding a second free to choose style - it'll depend on playtesting.
